Vineyard Mgmt: North/South orientation, planted to VSP trellis. Bulk of vineyard fruit destined for estate grown Tantara label.
Vinification: Hand sorted, destemmed with extended cold soak with saignee. Inoculated with RPIS. Pump-overs initially then punch-downs after peak fermentation.
Composition: 100% Cab Franc
Juice Stats: Brix 26.1, pH 3.95, TA 0.367
Cooperage: 25% new French oak, 25% new American oak, 50% 2nd & 3rd use French and American oak barrels
