2018 Labyrinth Cabernet Franc


Notes: Black currants, raspberry, plum, vanilla and violet with a touch of cedar.  Soft tannins provide an amazing mouthfeel and drinking experience.   


Appellation: Santa Ynez Valley, Santa Barbara County


Vineyard: Mateo’s Vineyard


Harvest Date: Sept. 10, 2018


Vineyard Mgmt: North/South orientation, planted to VSP trellis. Bulk of vineyard fruit destined for estate grown Tantara label.


Vinification: Hand sorted, destemmed with extended cold soak with saignee.  Inoculated with RPIS.  Pump-overs initially then punch-downs after peak fermentation.


Composition: 100% Cab Franc


Juice Stats:  Brix 26.1, pH 3.95, TA 0.367


Cooperage25% new French oak, 25% new American oak, 50% 2nd  & 3rd use French and American oak barrels


Production: 100 cases


Alcohol: 14.4%
