Appellation: Happy Canyon AVA, Santa Barbara County, CA
Vineyard: Tommy Town Vineyards
Soil: Tommy Town Vineyards lies in a zone where stony loams cover a clay stratum that curtails vigor and hydration. The magnesium silicate content limits yield while enhancing terroir expression and varietal elegance.
Composition: 100% Cabernet Sauvignon
Enjoyment Notes: Brilliant ruby-cranberry color; Medium bodied w/ soft yet grippy tannins; Aromatics of black currant, violet, dark berries & raspberry; Flavors of currants, berries, cranberry with a light minerality and a lingering finish; Enhance your experience by pairing with BBQ, beef carpaccio and other cured meats.
Vinification: Hand sorted, destemmed with a long cold soak. Inoculated with T73 with a long post soak. 7 months on lees in 1 & 2 use barrels (50% French, 50% American). Wine is unfined and unfiltered.
Cooperage: 40% new American oak barrels. 40% 2-3 year American oak, 20% 2-3 yr French oak
