PINOCULES Name: If there were a Greek god of Pinot Noir, he’d be named PINOCULES! (This word is a combination of Pinot and Hercules)
Whole-cluster Fermentation: Grapes are crushed and fermented while still on rachis (with the stems). This is an old French technique that imparts a small amount wood tannin and sugar to the wine and makes for an incredibly complex wine.
