2018 PETITE SIRAH - Paso Robles, CA
Our Petite Sirah is anything but petite, yet it’s well balanced, expresses beautiful fruit notes and plays wonderfully on the palette. In our tasting room, we usually end our wine tasting flight with this wine paired with a dark chocolate morsel.
Tasting NotesColor: Dense, black cherry hue with purple tinge
Nose: Opulent black fruit with a slight whiff of graphite
Mouth: Full bodied with dark fruit and hints of liquorice and cola finishing with fine grained but assertive tannins

Fermentation: Destemmed with 4-day cold soak. Pressed to barrel post-fermentation and aged in a mix of French & American oak barrels for 11 months. Racked 3 times. Bottled in August 2018, unfined and unfiltered.

Juice Stats: Brix 25.8; pH 3.64, TA 0.61
Alcohol: 15.0%
Cooperage: Aged in a mixture of French and American oak barrels for 24 months
Pair with: Roasts and game meats, berry cobblers and chocolate cake.
